- 2 Sweet potatoes (about 2/3 lb.)
- 1 - 1.5 Bananas
- 8 oz. Greek yogurt, plain
- 2 Eggs, beaten
- 4 Tablespoons granulated sugar
- 1 Tablespoon soy milk
- 1 Cup Royalty Pecans®, crushed coarsely
- 2 Tablespoons honey
- 2 Tablespoons granulated sugar
- 2 Tablespoons water
- Ground cinnamon (optional)
Peel sweet potatoes and cut into round slice, 1/8 inch thickness. Wrap in plastic wrap (or put in a bowl) and heat in a microwave for 2 minutes or until tender. Slice bananas. Arrange sweet potatoes and bananas overlapping into an 8″x8″ baking pan.
In a sauce pan, put 2 tablespoons water and 2 tablespoons granulated sugar. Heat over medium heat. When it starts to bubble, reduce heat and simmer until light golden brown. Add pecans and coat well until pecans are coated with melted sugar mixture. Then turn off the heat and add honey. Toss to coat.
Preheat the oven to 350 degrees F.
In a bowl, combine beaten eggs, yogurt, 4 tablespoons granulated sugar, and soy milk. Mix well. Pour the mixture into the baking pan and layer caramelized pecans on top. Sprinkle with cinnamon powder (optional).
Bake for 20-22 minutes. Let cool. Refrigerate for 2-3 hours.
