Royalty Pecans™ Recipe of the Month: September 2013
This recipe was sent to us by Vivian in Florida. We think this makes a tasty and memorable snack for tailgate parties, movie nights, or homemade gifts! It’s hard to resist the sweet and salty combo of caramelized pecans, savory bacon, and crunchy popcorn. For an added spicy kick, use our Sweetly Peppered or Veermont flavored pecans. Maple Bacon Pecan Popcorn
- 1 pound maple bacon
- 10 cups plain popped popcorn
- 1 1/3 cups Royalty Pecan Pieces
- 1/2 cup Virgin Pecan Oil
- 1/2 cup reserved bacon fat
- 1 cup and 2 tablespoons brown sugar, firmly packed
- 1/3 cup pure maple syrup
- 1 teaspoon maple flavoring
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Cook bacon until crisp; remove from pan to cool; reserve bacon fat. When bacon is cool, cut up into 1/2-inch pieces.
In a large microwavable bowl, mix popcorn and pecans.
In a 2-cup glass measuring cup, microwave reserved bacon fat, pecan oil, brown sugar, maple syrup and maple flavoring on High power for 1 minute 30 seconds or until boiling, stirring after 1 minute. Pour over popcorn. Sprinkle on salt and pepper and toss until well mixed.
Microwave mixture on High power for 5 minutes, stirring after each minute.
Stir in cooked bacon.
Spread mixture on paper towel and cool 5 minutes.
