Royalty Pecans Recipe of the Month: Jan 2013
Start the new year with some healthier dishes. This recipe uses Virgin Pecan Oil and our signature Take Thyme pecans to create a heart-healthy main course that's full of flavor. We now carry Virgin Pecan Oil in our gift shop along with many other specialty foods. Stop by for samples!
- 3 tablespoons soy sauce
- 2 tablespoons Virgin Pecan Oil
- 3 tablespoons fresh lemon juice
- ¼ teaspoon freshly ground black pepper
- 4 boneless skinless chicken breasts, about 6 ounces each
- 6 sprigs fresh thyme
- 1 Cup chopped Royalty Pecans® or Take Thyme flavored pecans
Combine the soy sauce, pecan oil, lemon juice, and black pepper and stir well. Add thyme sprigs and pour the mixture into a shallow dish. Add the chicken and smother it with the marinade. Cover and refrigerate for at least one hour, turning the chicken two or three times.
When ready to bake, remove chicken from the refrigerator and sprinkle with pecans.
Bake chicken in marinade at 350° for 25-30 minutes or until the chicken is thoroughly cooked.
