This recipe won “Healthiest Recipe” in our 2012 Recipe Challenge! This is what the winner, Dr. Crystal L. Schmidt, had to say about it:
“These are something I make almost every week and always have on hand for a quick out-the-door breakfast, or for a healthy treat that will keep me going for a long time! They are ultra-healthy and contain power foods: raw pecans, figs, coconut oil, chocolate, and just a touch of honey. I also encourage many of my patients to make these!”
- 2 Cups raw Royalty Pecans®
- 2/3 Cup chopped pitted baking dates
- 2/3 Cup chopped dried black mission figs
- 1 Tablespoons coconut oil
- 2 Tablespoons honey
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- pinch of salt
- 2 Tablespoons cocoa powder
In a food processor, grind the pecans until they are a course texture. Add the dates and figs and process until they are well combined.
Add the coconut oil, honey, almond and vanilla extracts, salt and cocoa powder. Process again until everything is combined and uniform in texture.
Take a heaping tablespoonful and form it into a ball by rolling it between the palms of your hands. Place them into an airtight container. For best results, store in the refrigerator.
