For Garlic Pecan Chicken
- 2 boneless skinless chicken breasts
- 1-2 cloves fresh garlic
- 3 Tablespoons olive oil
- 1/2 cup chopped Royalty Pecans® or Take Thyme pecans
- salt and pepper to season
- 1/3 Cup plain Greek yogurt
- 1/2 ounce grated Parmesan cheese
- 1 Tablespoon whole grain mustard
- 2 Tablespoons unsweetened almond milk
Crush pecans coarsely and put into a shallow plate for later.
Peel and grate garlic cloves and put into a skillet with olive oil. Turn on the heat to medium-low and cook garlic, stirring constantly until fragrant and lightly browned (about 2 minutes). Remove the skillet from heat and set aside.
Preheat oven to 400° F. Pound chicken breasts to about 1/2 inch thickness. Season with salt and black pepper. Coat chicken fully with the garlic olive oil, then cover both sides of each chicken breast with crushed pecans.
Place on a rimmed baking sheet and bake chicken for 20-25 minutes until cooked through.
Make sauce about 3-5 minutes before the chicken is done. In a saucepan, combine yogurt, cheese, mustard, and almond milk. Heat over low heat and just warm up the sauce, stirring constantly. Don't overheat the sauce or the yogurt will separate and become lumpy.
When chicken is done, place the chicken on each serving plate and cover with sauce.
