Winning Recipe | Special Ingredient Challenge
We love this combination of flavors and textures – sweet, salty, spicy, crunchy, crispy, and royally good. We think these mouth-watering bites would complement a variety of dishes from burgers to grilled salmon. They’d also make a great appetizer at your next party or barbecue.
- 2 potatoes
- ½ cup soft cream cheese
- ½ pound of bacon
- 2 cups kale
- ½ onion (chopped)
- ½ cup sliced radish
- 2 tablespoons chipotle peppers in adobo sauce
- 1 lime (juiced)
- 1 cup Royalty Pecans® (crushed and toasted)
- 1 tablespoon F.R.O.G Jam (use our Hoppin’ F.R.O.G. Jam for added jalapeno bite)
- 2 tablespoons Honey Royale
- 1 tablespoon extra virgin olive oil
- salt and pepper to taste
Peel potatoes and cut in rectangles 1/2-inch thick. Season potatoes with salt and pepper.
Combine 1/4 cup chopped pecans with soft cream cheese. Spread cream cheese on one side of each potato and make a “potato sandwich” with the pieces. Wrap potato sandwiches with bacon.
Heat a skillet on medium high and place bacon potato wrappers in skillet. Cook until crisp (7-8 minutes). Turn over once.
Cut kale and place it on the side of the same skillet. Add onion. Remove skillet from heat when kale and onions are soft but still have a crunch. Add salt and pepper.
In a separate bowl, mix chipotle peppers, honey, F.R.O.G. Jam, olive oil, lime juice, salt, and pepper to make a dressing.
Serve bacon wrappers with warm kale and radish salad on the side. Garnish with remaining toasted Royalty Pecans® and your homemade sweet and spicy dressing.
