Submitted by Ariel in College Station, Texas. This is a great way to do a healthier breaded and fried entree, like tilapia, salmon, chicken, or tuna fillet. If you want to get even more creative, try preparing other tasty things this way, such as eggplant or fried green tomatoes.
Honey Glazed Pecan Crusted Tilapia
- 4 whole tilapia fillets, cut in half lengthwise
- 3 Tbsp Honey Royale
- 1 Cup Panko breadcrumbs
- 1/2 cup crushed Royalty Pecans® (best to use a food processor)
- 3 eggs, beaten in bowl
- salt & pepper (as needed)
- 3 Tbsp Honey Royale mixed with 2 Tbsp hot water for glaze
- 3 Tbsp olive oil or Virgin Pecan Oil for frying
Wash tilapia and pat dry. Using a brush, brush both sides of the fillet with honey. Generously salt and pepper both sides of the fillet.
Combine the Panko and crushed pecans. Lay out your ingredients in separate dishes in this order: tilapia, beaten eggs, breadcrumb and pecan mixture. Dip the fish in the egg, coat with breadcrumbs/pecans on both sides, set aside. Repeat with all fillets.
Heat a large fry pan over medium heat. Add olive oil or pecan oil. When the oil is hot, turn the heat down to low. Add the fillets to the pan, make sure the fillets don’t touch each other. Fry on low for 2 minutes until the underside is golden brown. Turn. Fry another 2 minutes or until the fish is cooked through. Pour the honey glaze over the fish.
Note: if you don’t fry on low heat, the pecan coating will burn before the fish is cooked through.
