Recipe of the Month: October 2011
Chunky Pecan Granola Cookies
(featuring our signature Cinnamon Maple Pecan Granola)
1 Cup butter
1 Cup brown sugar
2 Cups flour
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla
1 Cup quick-cooking oats
2 Cups Cinnamon Maple Pecan Granola* from Royalty Pecan Farms
1 ½ Cup Royalty Pecans (roasted and chopped)
*For best results, we recommend using our signature granola, but if you want to try this recipe without it, you could use a different brand of granola and add a dash of cinnamon. The flavor may be different, but it should still taste great.
Mix ingredients well. Scoop spoonfuls of dough onto greased baking sheet. To add a festive touch, sprinkle some granola on top of each scoop of dough. Bake at 375 for 8 to 10 minutes.
These cookies are a hearty, chunky, healthy snack. The oats, granola, and pecans help fill you up, while the cinnamon, maple, and brown sugar help your sweet tooth! If you want to add a little extra pizazz, try adding either some chocolate chips, cinnamon chips, dried cranberries or dried cherries (or try a combination of these). Feel free to experiment with this recipe and make it your own!
