This delicious recipe is a hybrid of shortbread and sugar cookies mixed with chocolate. We think these Chocolate Pecan Shortbread Cookies pair well with our Southern Pecan Coffee, available online and in our gift shop.

Royalty Pecans™ Recipe of the Month: May 2013

Ingredients

  • 4 cups flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup chopped Royalty Pecans™
  • 1 tsp. vanilla
  • 2 squares of bitter chocolate, melted

Directions

Measure the 4 cups of flour after sifting. Add baking powder and salt, then sift again until any clumps are blended in. Mix all other ingredients together with the flour mixture.

Put the mixed cookie dough in the fridge and chill thoroughly before molding it into rolls. Wrap each roll of cookie dough in moisture-proof cellophane or wax paper, tape, and store in the refrigerator until needed.

When you are ready to bake, slice the rolls with a sharp knife and bake at 375 for 7-10 minutes.
